Steps to make Besan Ki Sev:
- In a mixing bowl combine together besan, red chilli powder, ajwain, oil and salt, mix well with your fingers
- Now by adding heeng water knead a medium tight dough but of smooth texture, knead it nicely for smooth texture, cover and keep it for 15 minutes
- In the meantime heat oil for deep frying in a kadai, first on high flame then make the flame medium
- Now again knead the dough with greased hands and put some portion of the dough in the greased sev machine and close it tightly
- Now start making sev directly in the hot oil, as much as it covers the oil
- Fry them, by turning them continuously until becomes crispy, do not over fry them for brown colour, when done then take them out on an absorbent paper
- In this way make sev from the rest of the dough, when they completely cools down then only you can store them in an airtight container. You can store them 15 - 20 days
- Serve them with tea or coffee or with poha
It is very easy to make these gram flour/ besan sev at home if you follow my simple instructions. Besan sev is a crunchy, crisp and fried snack. Besan sev is quite simple to make, in this the dough is prepared from chickpea flour adding various spices like black pepper,chili powder, crushed cloves, carom seed and asafetida. To make the sev special sev press is used. The crispy chickpea namkeen can be enjoyed as a topping for various chaats or a plain snack with tea.
