Heat the olive oil in a large, non-stick frying pan or casserole over a high heat. Add the prawns and cook until only just coloured on each side before removing from the pan with a slotted spoon.

  1. Take 500 grams Pasta
  2. Prepare 250 grams chorizo or salami
  3. Take 200 grams prawns
  4. Take 6-7 dry chillies (no seed) -optional
  5. Make ready 3-4 cloves garlic
  6. Prepare 1/4 bunch coriander
  7. Get 1/4 bunch parsley
  8. Take 6 Tbsp olive oil

The key to this dish is the fried chorizo sausage which, when fried gives up its deliciously spicy oil. Cook over moderately high heat, stirring occasionally, until the tomatoes just start to soften,. Slice the chorizo into bite-sized pieces. Add to a frying pan over a medium heat and cook until crispy.

Instructions to make Prawns and Chorizo Pasta:
  1. Prepare ingredients
  2. Use 4 Tbsp of olive oil and heat up the pan. Fry chillies with medium heat and turn off when smell nice. Take them out the pan and leave them on the side. ** You can skip this step, if you don’t like a little extra spicy.
  3. Using the same oil with low heat, fry chorizo and/or salami (optional) to release their oil and flavours. When the oil starts changing colour and smells nice, take them out the pan and leave it on the side. Also take out all the flavoured oil. Chorizo can be burned easily, keep an eye on them.
  4. Add little fresh oil in the same pan, warm up and coat the prawns.
  5. Cook your pasta as per the instructions on the packet. Water should be boiled already. Add pasta as soon as you take the prawns out of the pan.
  6. Heat up the same pan with 2 Tbsp of olive oil. Cook garlic until golden and add back chorizo/ salami and oil and chillies. Add back pasta and coat pasta with oil. Add back prawns. Mix everything together.
  7. Add finely chopped coriander and parsley. Mix them together.
  8. Grate parmesan cheese and you can serve pasta with parmesan cheese and truffle oil (optional)
  9. Pasta is ready to be served.

Slice the chorizo into bite-sized pieces. Add to a frying pan over a medium heat and cook until crispy. Once crispy, add a pinch of dried chilli flakes and the raw prawns. Cook the prawns until they're pink, then add a chopped garlic clove. Flip and cook another minute or two.
