Shrimp In Tomato Sauce With Feta How To Make A Greek Shrimp Saganaki So after you have prepared the fresh tomato sauce, heat a splash of olive oil in a non-stick frying pan, and saute the shrimp for about a minute on each side. Then toss in the minced green bell pepper and a splash of red wine (you may use brandy, or ouzo instead). Cook the sauce until it reduces and thickens beautifully. Add the scallions, shrimp and crumbled feta.

- Chop onions and add them to a sauce pan. On very low heat cook onions until soft but not brown. Add garlic and the chillies and cook for another minute or so. If the pan gets too dry and the onions start burning add a splash of wine

- Add prawns and half of the parsley. cook covered for 2 minutes
- Add the crumbled feta, the rest of the parsley, turn off the heat and leave the feta to melt.
Cook the sauce until it reduces and thickens beautifully. Add the scallions, shrimp and crumbled feta. Garnish with chopped parsley and lemon wedges. Shrimp saganaki is similar as it is also baked and served in a skillet but it has a few additional ingredients. This recipe uses large prawns, aka shrimp, which are cooked in a rich and often spicy tomato sauce, topped with ouzo, set on fire, and then finished with a heavy sprinkling of feta cheese.
