  3. Add sesame oil to a pan, then fry off onion and pepper quickly then add garlic, chilli and soy sauce and stir through. Add prawns, scallions and finish off with coriander.

Serve with coriander sprinkled over, lime wedges and extra Sichuan salt and pepper for dipping. While the oil is heating (keep an eye on it!) place the salt, pepper and chilli into a large bowl and stir a little with a spoon to ensure even distribution of the salt and pepper.
