The ingredients needed to make Chilli Prawn and Pineapple:
  1. Take 1 medium onion chopped
  2. Take 4 red chilies chopped
  3. Get 2 tblsp massaman curry paste
  4. Take 1 cup pineapple juice
  5. Get 1 1/2 cup fish stock/ prawn heads
  6. Make ready 2 cups green beans halved
  7. Take 1 red pepper chunky chopped
  8. Prepare 200 g baby corn halved lengthwise
  9. Take 1 small pineapple chopped
  10. Prepare 400 g prawns
  11. Prepare 2 tblsp coriander chopped

Once soft add curry paste and fry till fragrant. Add red pepper, green beans, baby corn and stir. Clean prawns but leave the tail. Mix prawns and pineapple with the marinate.

Instructions to make Chilli Prawn and Pineapple:
  1. On medium heat fry onion and chilli. Once soft add curry paste and fry till fragrant. Add pineapple juice and water and prawn heads (or stock) bring to boil and simmer for 8-10 minutes.
  2. Add red pepper, green beans, baby corn and stir. Remove prawn heads. Add pineapple and simmer for 5 minutes. Add prawns and cover. Cook for 90 seconds.
  3. Add coriander, and remove from heat and stir. Season with salt and pepper and serve hot 🤩

Clean prawns but leave the tail. Mix prawns and pineapple with the marinate. Thread three prawns, alternating with pineapple on a skewer. Brush with olive oil, sprinkle evenly with chilli flakes. Then place the skewers on griddle and cook over medium-high heat.
