Fermented Chilli Sauce is one of the most favored of current trending foods in the world. It’s easy, it is fast, it tastes delicious. It’s appreciated by millions every day. They’re nice and they look wonderful. Fermented Chilli Sauce is something which I’ve loved my whole life.

How to Make Fermented Hot Sauce - the Recipe Method First, ferment the chili peppers. The peppers may rise a bit when fermenting. Fermented hot sauce is a spicy, slightly acidic sauce made by fermenting hot chilis and other ingredients together in a jar or crock. Over time, flavor will deepen, growing more and more complex and more acidic as beneficial bacteria go to work.

To get started with this recipe, we have to first prepare a few ingredients. You can cook fermented chilli sauce using 10 ingredients and 3 steps. Here is how you cook it.

The ingredients needed to make Fermented Chilli Sauce:
  1. Take 2 cloves garlic
  2. Take 1 tablespoon apple cider vinegar
  3. Prepare 1/2 (1 jar) tomato puree (ideally homemade but a good shop version will work)
  4. Make ready 1/2 teaspoon salt
  5. Take 1 teaspoon date syrup
  6. Prepare 1 chilli (remove seeds for a milder version)
  7. Take 1 teaspoon gochujang brown rice pepper paste
  8. Prepare 1 splash tamari
  9. Take 1 splash seaweed 'fish' sauce
  10. Get 2 teaspoons fermented vegetable brine (we used kimchi)

In a large jar, crock or mason jars, put the onions, garlic, turmeric, topped by the chopped chili peppers. Pour the room temperature brine over top until covered (make a little more if you need to, to cover it). Tip: chili peppers are hot, we strongly recommend wearing gloves while preparing this recipe. Pack peppers, onion and garlic into fermentation jar.

Steps to make Fermented Chilli Sauce:
  1. Clean the jar and pop in the over for 15 minutes on a low heat as you would when making jam and pickles
  2. Put all ingredients in the jar and stir well. The ingredients should come right to the top without an air gap, so pick a suitable sized jar with lid.
  3. Leave to ferment at room temperature for 3 days. Give it a quick stir and a wiggle couple of times a day. After 3 days it's ready to eat and to store in the fridge. You can also add some fruit puree to make a fruity, brown fermented sauce - we will update you on this experiment shortly! Add to your noodle dishes, salads and sandwiches and good with a vegan cooked breakfast!

Tip: chili peppers are hot, we strongly recommend wearing gloves while preparing this recipe. Pack peppers, onion and garlic into fermentation jar. Combine salt and water, stir until salt is fully dissolved to make the brine. Add fermentation weight and pour in brine to cover, vegetables should be fully submerged. Pour the fermented pepper mixture, including brine, into a pot along with the vinegar, garlic, brown sugar and granulated sugar.
