Melt the butter, sugar and honey in a pan over a medium heat, stirring frequently until the butter has melted and the mixture is smooth. When the butter has melted and all the sugar has dissolved, tip in rolled oats and dried fruit. Put the butter, sugar, and syrup in a saucepan, and stir ir over a medium heat until the butter has melted. put the melted mixture into a miXing bowl, and add the porridge oats and any optional ingredients you want to add. put the mixture in a papered tin, flattening the mixture with the back of a spoon. Melt the butter, sugar and syrup or treacle in a saucepan, but be careful not to let it boil.

Instructions to make Sultana Flapjacks:
  1. Preheat oven to 180 c, 160 fan. Place butter, sugar and syrup in saucepan and heat gently until butter and sugar are melted.
  2. Stir gently until smooth, remove from heat, add oats and ginger, stir until mixed, add sultanas and stir again.
  3. Spread the mixture evenly into a buttered 12 × 10 inch swiss roll tin,pat down gently, place in oven, cook until golden brown. Approximately 20 minutes, check after 15 min, don't let it overcolour, should be soft to touch.
  4. Remove from oven, allow to cool slightly, cut in to squares or fingers whilst still warm using a buttered knife.
  5. They will crisp up and Harden as they cool. When completely cold store in an airtight container.
