- First take a pan and roast the rice flour, till the flour is very hot to touch. Remove and set aside.
- Take a pan and add in 1.5 cups of water and allow it to boil.
- Take a idly cooker/ Streamer add in some 2 small cups of water and allow it to boil.
- Now add salt and oil to the roasted rice flour. Mix well Add hot water slowly, with the help of spatula mix the flour well. Add water little by little and make it as tight dough. Adjust water as per the rice flour.
- Prepare small oblong balls and load it in the idiyappam press. Grease the idli plate with little oil. Press the idiyappam strings onto idly plate. Once the dough is pressed, transfer the plate to a steamer and steam the idiyappam for 10 mins. After 10 mins of steaming, rest the idli plates for 5 minutes before removing the idiyappam. Serve idiyappam with sweet coconut milk.
You can also serve with Chicken Stew. Idiyappam is also called as Nool Puttu in Karnataka and String Hoppers in Srilanka. Idiyappam is usually served with a variety of side dishes like peas curry, vegetable kurma, chicken stew, egg or chicken curry.
