- Take 1/2 cup blanched spinach paste
- Prepare 1/4 cup blanched beetroot paste
- Take For Chutney
- Get 1 coconut grated
- Take 2-3 hot chillies
- Make ready 1/4 cup curry leaves
- Get 2 Tbsp fresh cilantro
- Make ready as needed Salt
- Make ready 1 tsp oil
- Prepare Sugar as per your taste

- Prepare the better by grinding soaked rice and daal into fine paste using water, first rice and then daal,,,, after grinding mix both and stir in one direction and keep it aside for fermentation about 7-8 hours
- After that divide the better into 3 bowls,,,1 part keep white 2nd one mix beetroot purée and 3rd one mix in spinach purée, adjust the better not thick not runny,,, mix salt, 1-2 tsp hot oil, pinch soda bi carb and 1 pkt of Eno divide in all 3 colored better and mix well
- Now take idli stand and grease with oil,,,put your idli cooker on gas stove to preheat for steaming
- Now prepare for flower idli using zebra cake technique,,,, using spoon starting with white better then spoon green better and then pink better,,, repeat the process twice and prepare all the idli plates like this,,, now take a tooth pick and start from edges to the center and make flowers and put those plates into idli cooker, steam for about 10-12 minutes or until toothpick come out clean
- Make chunky coconut chutney with all the ingredients and serve hot idli with chilled coconut chutney
